Team Hawai‘i – National Silver Medalists

We’re so proud of our Students and Chef!

Team Hawaiʻi, Kapiʻolani Community College’s 2019 culinary competition team, received a silver medal in the American Culinary Federation National Competition. 

“I’m so proud of our student team from Kapiʻolani Community College to get this far. They really put their hearts out there on the plates and in the kitchen,” said Peel. “Although the national (gold) win didn’t go our way this time, they represented Hawaiʻi with dignity and pride,” Chef Jason Peel.

Each team prepared a four-course menu, with 110 minutes to prep, cook, plate and serve all dishes to the judges within the time limit. They were judged on presentation, flavor, nutritional value, cooking technique, teamwork, sanitation and timing.

Greg Gamayo, Jr.

Greg is from Kalihi, ‘Oahu. Upon graduating from the Culinary Program, Greg aspires to explore various culinary techniques and grow his current skills in preparation for his eventual goal to open his own restaurant.

Xiaoling Cheng

Xiaoling is from Beijing, China and as a recent graduate of the Culinary Program, she will be entering into the 4-year degree Culinology Program at the University of Hawai‘i Mānoa.

Ritchie Wong

Ritchie is from Honolulu and plans to move to Japan for 2-3 years to study new techniques and increase his knowledge of Japanese culinary cuisine.

Kainoa Reloza

Kainoa is from Sacramento, California. His eventual goal is to open a food truck or bakery in California. “I haven’t put too much thought into the kind of food I would like to sell because my vision is always changing.”

Ethan Momohara

Ethan is from Honolulu, Hawai‘i and plans to work in various restaurants and work his way up within the culinary industry. After gaining experience within the industry, he would also like to teach culinary classes.

Team Gallery

Team Hawaiʻi prepares for the competition by working on a complex menu that must consist of a modern twist on the classical dish filet de sole veronique. Along their journey to the nationals, they are also actively volunteering and believe in, “always giving back,” to the community.
