Team Hawai‘i Headed to Nationals

Culinary Program ACF Team

Team Hawai‘i from Kapi‘olani Community College will be competing in the American Culinary Federation (ACF) National Finals on August 6 in Orlando, Florida.

Five of our current culinary students will represent the State of Hawaii to compete against three other regional finalists in this elite competition. It takes an entire year for our team to prepare for the one moment where they will have to create and serve four dishes in only 110 minutes. There is only one shot at winning!

The highly respected American Culinary Federation is the largest organization of professional chefs in North America. With more than 15,000 members in over 150 chapters in four regions, the ACF represents the United States in major competitions around the world.

Greg Gamayo, Jr.

Greg Gamayo, Jr.

Greg is from Kalihi, ‘Oahu. Upon graduating from the Culinary Program, Greg aspires to explore various culinary techniques and grow his current skills in preparation for his eventual goal to open his own restaurant.

Xiaoling Cheng

Xiaoling Cheng

Xiaoling is from Beijing, China and as a recent graduate of the Culinary Program, she will be entering into the 4-year degree Culinology Program at the University of Hawai‘i Mānoa.

Ritchie Wong

Ritchie Wong

Ritchie is from Honolulu and plans to move to Japan for 2-3 years to study new techniques and increase his knowledge of Japanese culinary cuisine.

Kainoa Reloza

Kainoa Reloza

Kainoa is from Sacramento, California. His eventual goal is to open a food truck or bakery in California. “I haven’t put too much thought into the kind of food I would like to sell because my vision is always changing.”

Ethan Momohara

Ethan Momohara

Ethan is from Honolulu, Hawai‘i and plans to work in various restaurants and work his way up within the culinary industry. After gaining experience within the industry, he would also like to teach culinary classes.

Team Gallery

Team Hawaiʻi prepares for the competition by working on a complex menu that must consist of a modern twist on the classical dish filet de sole veronique. Along their journey to the nationals, they are also actively volunteering and believe in, “always giving back,” to the community.
